1Fish sauce and gastric cancer:an ecological study in Fujian Province,China显示文摘AIM To explore the relationship betweenconsumption of fish sauce and the risk of gastriccancer in Fujian Province.METHODS An ecological study was carriedout.A total of 11000 subjects from 55 townshipswere randomly selected from 10 counties withinFujian Province.All subjects were localresidents who had been living in Fujian Provincefor more than 20 years,within the age group of45-74 years.Trained interviewers conductedface-to-face interviews with a standardizedquestionnaire,which covered the frequency andamount of food intake,dietary habit,tobaccoand alcohol consumption and history of chronicgastric diseases.Univariate and multivariateanalyses were performed using Epi-info and SASstatistical packages,respectively.RESULTS A significant correlation betweenmonthly consumption of fish sauce and mortalityof gastric cancer was found.Pearson’scoefficient of correlation was statisticallysignificant with r=0.7356 for males,r=0.5246for females(P<0.01).In the multivariateanalysis,consumption of fish sauce still showedan association with the risk of gastric cancer.No significant positive correlation betweenesophagus cancer,liver cancer,colon cancerand consumption of fish sauce were observed.CONCLUSION Long-term intake of fish saucemay be related to high mortality of gastriccancer.Consumption of fish sauce might be oneof important and unique etiologic factors ofgastric cancer in Fujian Province.Furtherstudies are needed to confirm this ecologicalstudy.Lin Cai Shun Zhang Yu Wei Min Ye Ying Nan Yi 2000World Journal of Gastroenterology2000,6,5:18
2Discrimination of Chinese traditional soy sauces based on their physico-chemical properties显示文摘This work aimed to classify the categories (produced by different processes) and brands (obtained from different geographical origins) of Chinese soy sauces.Nine variables of physico-chemical properties (density,pH,dry matter,ashes,electric conductivity,amino nitrogen,salt,viscosity and total acidity) of 53 soy sauce samples were measured.The measured data was submitted to such pattern recognition as cluster analysis (CA),principal component analysis (PCA),discrimination partial least squares (DPLS),linear discrimination analysis (LDA) and K-nearest neighbor (KNN) to evaluate the data patterns and the possibility of differentiating Chinese soy sauces between different categories and brands.Two clusters corresponding to the two categories were obtained,and each cluster was divided into three subsets corresponding to three brands by the CA method.The variables for LDA and KNN were selected by the Fisher F-ratio approach.The prediction ability of all classifiers was evaluated by cross-validation.For the three supervised discrimination analyses,LDA and KNN gave 100% predications according to the sample category and brand.KOKOT Serge 2010Science China Chemistry2010,53,6:6
3Nutritional Value and Sensory Acceptance of Fermented Meat Sauce“Shishibishio”with Neutrase and Flavourzyme Enzyme under Different Salt Concentrations显示文摘Shishibishio,a Japanese traditional seasoning,is made from fermented meat.The study aimed to evaluate the effect of neutrase 0.5 L alone or flavourzyme 500 L+neutrase 0.5 L on the acceleration of fermentation period and the improvement of nutritional value and sensory acceptance of the final product.The fermentation mixtures(moromi)were prepared by mixing ground pork with salt at one of three concentrations(15%,20%or 25%),koji(rice fermented with Aspergillus oryzae)and pepper.To accelerate the fermentation of moromi,all treatments were added with neutrase at the begining,then adding with or without flavourzyme after one month.The results showed that neutrase or neutrase+flavourzyme mixture accelerated hydrolysis of meat protein during the fermentation of moromi.Yield,protein recovery,total nitrogen and free amino acid in shishibishio treated with enzymes were significantly greater(P<0.05)than that of control,especially at 15%salt.The treatment treated with neutrase+flavourzyme was significantly increased(P<0.05)in free amino acid as compared with treatment with neutrase alone,resulting a better sensory taste and smell,which was mostly accepted.Almost the shishibishio obtained after six fermentative months was acceptable seasonings having a good taste and no unpleasant smell.Nguyen Hien Trang 2017Journal of Agricultural Science and Technology(A)2017,7,B10:0
4Upgrading VFAs bioproduction from waste activated sludge via co-fermentation with soy sauce residue显示文摘Conditioning of extra carbon sources has been widely reported to facilitate fermentation of waste activated sludge (WAS). Soy sauce residue (SSR) was a relatively untapped carbon source for sludge conditioning. This batch study aimed to evaluate the possible implementation of SSR for volatile fatty acids (VFAs) production from WAS. To upgrade the bioavailability of feedstock, three typical pretreatment methods were conducted, i.e., ammonium hydroxide (AH), sulfuric acids (SA) and thermal assisted alkaline (TA). AH pretreated test (AH-PT) outperformed due to a relatively strong structure decomposition of cellulosic materials as revealed by infrared spectroscopic analysis and crystal index. As a result, performed a high hydrolysis rate of 4449 mg COD/d, 1.12-1.23-fold higher than that in TA and SA pretreated tests (TA-PT and SA-PT), and 7.8-fold higher than that in the Control test. Meanwhile, a volatile fatty acids (VFAs) contribution of 401.2 mg COD/g SSR L and a maximum acidification rate of 3.59 d was recorded, with a high sum proportion of mall molecular acetic and propionic 82.2%, 11%-70% increase over the other three tests. Besides, speciation process characterized with functional genus differentiation was identified by microbial diversity and distribution investigation and canonical correspondence analysis (CCA).
