| 1 | 包装材料对营养配方粉理化稳定性的保护作用研究显示文摘本研究选用复合软包装袋包装的全营养配方粉中试样品进行影响因素试验,判断置于原包装袋和平皿中样品在高温(60℃)、强光照(4500±500 Lx)及高湿度(RH 90%)环境储藏14天时,样品固有的理化稳定性及包装袋对样品的保护作用。结果表明,平皿中样品在高湿度环境储藏8天后重量显著增加且发生霉变,样品颜色在3种储藏环境下均显著改变,热敏性及光敏性维生素在相应储藏环境下显著衰减。原包装袋内样品在强光照及高湿度环境下均具有较高的理化稳定性,但于高温环境储藏时发生维生素降解。由此说明,配方粉对高湿度和强光照环境敏感,包装袋能有效保护其储藏过程中不受类似恶劣环境影响,但包装袋对高温阻隔性能相对较差。 | 庄柯瑾 张东岩 冯晓涵 田芳 陈晶 朱振宇 Cellar A·Nicholas 张微 满朝新 赵艳荣 姜毓君 | 2020 | 中国乳品工业2020，48，5： | 2 |
