1沙果、猕猴桃复合果醋酿制工艺的研究显示文摘以沙果、猕猴桃为原料,利用液体发酵制作复合型果醋,研究了果汁混合比例、酒精发酵条件、醋酸发酵条件及果醋澄清工艺。结果显示:最适工艺条件为沙果汁与猕猴桃汁的比例3∶2;酵母接种量10%、发酵时间5天、温度30℃、糖度8%;醋酸菌接种量8%、发酵时间3天、温度32℃;加入300mg/L果胶酶时复合果醋最为澄清,透光率为90.78%。杜国军 张芳菲 Hanhineva K 2018中国调味品2018,43,4:8
