1Glu-1和Glu-3等位变异对小麦加工品质的影响显示文摘Glu 1位点等位基因编码的高分子量麦谷蛋白亚基 (HMW GS)和Glu 3位点等位基因编码的低分子量麦谷蛋白亚基 (LMW GS)是决定小麦加工品质的重要因素。用优质面包小麦中优 95 0 7的两个杂交组合 ,即中优 95 0 7/鲁麦 5号和中优 95 0 7/晋麦 4 5F5代 ,澳大利亚优质面包小麦Sunstate的两个杂交组合 ,即Sunstate/济南 16和Sunstate/鲁麦 2 1F2 代 ,研究了Glu 1和Glu 3位点等位变异对小麦加工品质的影响。结果表明 ,当材料为非 1BL/1RS易位系时 ,位点对小麦加工品质的贡献大小为Glu D1>Glu A3≥Glu B1;当材料为 1BL/1RS易位系时 ,位点对小麦加工品质的贡献大小为Glu B3>Glu D1>Glu A1。 1BL/1RS易位对SDS沉降值、和面时间和耐揉性均有显著负面影响。就单个亚基而言 ,Glu A1位点 1>N ,Glu B1位点 17+18>7+8>7+9,Glu D1位点 5 +10 >2 +12、3+12和 4 +12 ,Glu A3位点GluA3d和GluA3b >Glu A3a ,Glu B3位点GluB3d >GluB3b和GluB3h >GluB3j。亚基组合为 1、7+9、5 +10、GluA3d、GluB3b和 1、7+8、5 +10、Glu A3d、GluB3d的材料 ,加工品质优良 ,亚基组合为 1、7+8、2 +12、GluA3a、GluB3d和N、7+9、3+12、GluA3d、GluB3j的材料加工品质较差。刘丽 周阳 何中虎 阎俊 张艳 Pea R J 2004作物学报2004,30,10:54
2软质小麦品质性状与酥性饼干品质参数的关系研究显示文摘选用我国17份软质小麦品种(系)在3点种植2年,研究软质小麦品质性状与酥性饼干品质的关系,探讨优质饼干品种的筛选指标。结果表明,粉质仪和拉伸仪参数与饼干品质的相关系数较小;吹泡仪弹性、吹泡仪弹性,延伸性、碱水保持力(AWRC)、碳酸钠溶剂保持力(SRC)和蔗糖SRC与饼干直径关系密切,相关系数分别为-0.79、-0.75、-0.78、-0.79和-0.80,可作为饼干品质的筛选指标。筛选出建麦1号、皖麦19和皖麦48三个饼干品质优良的品种,提出了优质饼干小麦品种的具体品质指标,即籽粒硬度(SKCS)1~40,籽粒蛋白质含量9.0%~11.5%,面粉蛋白质含量8.0%~10.0%,吹泡仪弹性≤40mm,弹性,延伸性≤0.50,吹泡仪能量≤75×10^-4J,碱水保持力≤59%,水SRC≤53%,碳酸钠SRC≤66%,乳酸SRC≤83%,蔗糖SRC≤87%,饼干直径≥480mm。张岐军 张艳 何中虎 R J Pea 2005作物学报2005,31,9:58
3不同加水量对北方馒头加工品质影响的研究显示文摘加水量是影响馒头加工品质的重要因素。用3种不同筋力的6个小麦面粉和5个水平加水量研究了加水量与北方馒头品质的关系。结果表明,在粉质仪测定的吸水率范围内,加水量显著影响馒头重量、体积、宽度、高度、比容及延展率。不同筋力面粉的馒头品质对加水量变化的敏感性不同。加水量与弱筋馒头表面亮度、色泽、光滑度、结构、压缩张弛性及总评分呈显著或极显著负相关(r=-0.663~-0.962),但在一定范围内,加水量增加能显著改善强筋馒头表面光滑度和内部结构(r=0.877,0.768)。强、中、弱筋面粉制作北方馒头的最适加水量分别为粉质仪吸水率(FWA)的85%、80%和70%~75%。压缩张弛性(SR)与强、中、弱筋馒头总评分呈极显著正相关,决定系数分别为0.94、0.88和0.72,可作为馒头品质评价的有效指标。陈东升 张艳 何中虎 王德森 Pea R J 2005作物学报2005,31,6:28

6Combined carriership of TLR9 -1237C and CD14 -260T alleles enhances the risk of developing chronic relapsing pouchitis显示文摘AIM: To investigate the single nucleotide polymorphisms (SNPs) in genes involved in bacterial recognition and the susceptibility to pouchitis or pouchitis severity.METHODS: Analyses of CD14 -260C>T, CARD15/NOD2 3020insC, Toll-like receptor (TLR)4 +896A>G,TLR9 -1237T>C, TLR9+ 2848G>A, and IRAKM +22148G>A SNPs were performed in 157 ileal-pouch anal anastomosis (IPAA) patients (79 patients who did not develop pouchitis, 43 infrequent pouchitis patients,35 chronic relapsing pouchitis patients) and 224 Italian Caucasian healthy controls.RESULTS: No significant differences were found in SNP frequencies between controls and IPAA patients.However, a significant difference in carriership frequency of the TLR9-1237C allele was found between the infrequent pouchitis and chronic relapsing pouchitis groups [P = 0.028, odd's ratio (OR) = 3.2, 95%CI = 1.2-8.6].This allele uniquely represented a 4-locus TLR9 haplotype comprising both studied TLR9 SNPs in Caucasians.Carrier trait analysis revealed an enhanced combined carriership of the alleles TLR9 -1237C and CD14 -260T in the chronic relapsing pouchitis and infrequent pouchitis group (P = 0.018, OR = 4.1, 95%CI = 1.4 -12.3).CONCLUSION: There is no evidence that the SNPs predispose to the need for IPAA surgery.
